Strawberry, Yogurt and Granola Parfait Recipe
If you're looking for an easy, healthy parfait recipe that can be prepared in just a few minutes, then this is it.
It's a perfect brunch menu item that's sure to evoke a lot of oohs and aahs when your guests come to table. Prepare these parfaits ahead of time in individual glass cups and refrigerate until it's time to serve. Just before serving, top each off with granola and honey and your guests will be amazed at your hostess skills.
When a recipe is this simple, spending a few extra seconds on presentation helps create impact effortlessly.
All you have to do is use any clear glass or bowl and arrange the strawberry slices carefully against the wall of the dish. I used mini glass trifle bowls for these parfaits (just because that's what I have in my cupboard), but mid-size drinking glasses just as well.
Having a casual brunch in the garden? Use plastic glasses instead and clean up is really easy.
INGREDIENTS:
1. Plain Greek yogurt or yogurt of your choice.
2. Strawberries (2-3 sliced strawberries)
3. Granola
4. Honey
METHOD:
1. Spoon a teaspoon of Greek Yogurt into a mini glass trifle dish.
2. Slice up a few strawberries and arrange them against the side of the dish.
3. Spoon yogurt into the center of the dish, alternating with a few slices of strawberry.
4. Just before serving, top it off with some granola clusters and a drizzle of honey.
Do you have a large crowd coming over for brunch? Make one large parfait dish instead of individual cups.
I use my large, trifle dish for this and build layers of yogurt, sliced strawberries, granola and honey all the way to the top. It's one of those show stopper centerpieces on your brunch table that never fails to impress.
I make it about half an hour before the guests are due to arrive. The only difference between making parfaits in individual cups versus one large dish, is that the granola will be more chewy than crunchy when set up in one large dish. It's still delicious and my brunch guests have always been delighted when they see and taste this one.
